CousCous Salad

Great for Christmas day..... Makes a large salad for not much money...


Ingredients:

1 box CousCous (I use San Remo. I wouldn't recommened Israeli couscous as it doesnt hold the dressing or other ingredients as well, but not saying you can't!)
4-6 Chorizos (from the deli)
Mint (we use ours fresh from our pot plant)
1-2 Red onions (size and preference dependant)
Balsamic Vinegar (i have never tried balsamic vinegarette dressing, but worth a shot!)



Cook couscous in plain water (no spices, seasonings, butter etc)
Place into a bowl and glad wrap the top - chill overnight in the fridge.
In the morning, chop up the chorizos, onion and mint, and stir into the couscous.
Pour over balsamic vinegar to taste. I like alot and making the salad with the whole box, I can easily use 1/4 cup of vinegar!


Stir it all up and eat same day.
